This recipe comes from one of my cookbooks; Muffins and Smoothies by Cheryl Lindblad.
Batter:
350 ml Flour
½ teaspoon Baking powder
½ teaspoon Baking soda/bicarbonate of soda
¼ teaspoon Salt
125 gram Unsalted butter, at room temperature
250 ml Brown sugar, preferably demerara
2 Eggs
125 ml Cocoa
1 teaspoon vanilla extract or vanilla sugar
150 ml Milk
Filling:
300 gram Cream cheese
75 ml Cane sugar
1 Egg
1 teaspoon vanilla extract or vanilla sugar
Instructions
Batter:
Mix all the dry ingredients in a bowl, and put it aside.
Whisk butter and sugar together and add the eggs, one at a time.
Add cocoa and vanilla. Add milk and the dry ingredients, and mix thoroughly.
Filling:
Whisk the cheese till it gets really soft.
Add sugar, egg and vanilla and whisk thoroughly.
Spoon one teaspoon of batter into muffin molds. On top of that two teaspoons of filling, and finish off with one teaspoon of batter.
Bake at 175°C in a preheated oven for about 25 minutes.
Well, my Mum and Dad came to visit me me for the weekend, so I decided to bake some muffins to them :3
