I've heard it suggested that a save for each stage of "production" is a good idea.
As in, when you've finished all the modelling, save it with "modelled" or so somewhere in the file name.
Same goes with the UV mapping phase, the texturing phase, lighting, etc.
Someone even went so far as to save more than one successive version for each stage, for example when you finished the tree, but not the bush, and so on.
