And here is my first cooking submission, a deliciously grilled amount of eggplant coated with mozzarella, my own red sauce, and a basil leaf from my garden to top them ^^
RECIPE!
(Just as a note, i very rarely go by a recipe, just general directions, I like each dish to have a slight variance, and I do appologize but the recipe for my sauce will remain a secret for now ^^;;)
1 Large Eggplant, not skinned and sliced into quarter inch slices.
Mozarella cut into thin slices large enough to cover the eggplant slices.
A healthy amount of red sauce, marinara, ragu, or hell, try it with alfredo or vodka sauce if ya feel nutty enough.
Freshly cut basil (Mine were fresh from my garden so it came out just fine, make sure you wash them though)
DIRECTIONS!
fire up a grill, whether it be charcoal, gas, or some sort of radioactive material fueled one. Make sure the coals are compeltely ashed over if you are using a charcoal grill(these were made on one.) Take the sliced eggplant and place them on the grill, I recommend soaking them in water beforehand. After they are nicely grilled on the bottom (do not let them burn :P ) flip them over, and then place the mozzarella on top of them. Allow the cheese to melt but not burn. Once the bottoms are looking nicely grilled, stack a few of them, one on top of the other and press down lightly to secure them together. Put em on a plate, top them with whatever amount of sauce you are comfortable with, and if ya like, spruce it up with some fresh basil!+
