The fret wire (center) has been carefully bent by hand to a radius a bit smaller than that of the fretboard. this will keep the fret ends from lifting up as I pound the frets in. I will cut it to length and place each individual fret in a numbered slot in the wooden block to keep track of them, after which I will use the fret slot saw (far right) to make sure that there is no debris left in the slots before tapping them in carefully with a special mallet.
Once that's done I will use the flush cutters (right) to cut the the overhanging ends flush with the side of the neck and bevel the edges with a file mounted on a block at at 35o angle (upper left hand corner)

Well, the job itself, with all the proper tools should take anymore than 3 hours Though at Rainsong I was known for doing this job in 45 minutes:3
It would likely be in the shop a few days though if there was work to get done a head of it however.
On the other hand, if your wanting to get stainless steel frets installed I wouldn't be able to say for sure. I have never worked with them. I know that they are harder to work with and a bit more time consuming and expensive to install than nickel silver, but if your having issues with drastic fret wear it might be worth your while since they will probably last the lifetime of the instrument.
