Eh, I'm not sure if it's rather a cultural tradition stuff or just some prefer it being more greasy but...the guancale, bacon and the pancetta all contain enough fat to cook them slowly and perfectly. At least I always managed to make it work ;P (btw, just posted a photo about my carbonara I cooked earlier, recently on here. Check it out ^^)
