From Chris: There are a few things Blackpelt does not mention about this dish that need to be addressed:
~ While you do not need to wash your chicken before frying / baking, it IS a good idea to make sure they are thoroughly dry with a paper towel, on a clean surface. Then you can wash the surface afterwards to avoid any cross contamination.
~ Once dried, the chicken -can- be cooked as is, but I would recommend coating the chicken with corn starch or Wondra flour, so that way the sauce has a chance to soak into the wings. If you like it extra hot, baste the wings once before cooking; get a small saucepan and cook the sauce on high to clear off the germs, and then when the chicken is done baste the wings again.
~ Make sure you have plenty of milk / kefir / lassi on hand, water will NOT work in easing off the hotness!
~ And when working with the sauce, PLEASE wear gloves when cutting open habaneros and cayennes, and dont touch your eyes / other sensitive areas, the oils/membranes/seeds are the spiciest bits :B
