No way this is anyone's authentic shepherd's pie, but it's my iteration and I love it. Honestly, I've never heard of this type of dish and it was made for me by my first furry boyfriend (very classic story, feel free to ask me. :P ). I also should have taken a pic of the Tostadas I made at the same time (I tend to go on cooking frenzies and make 4 meals all at once)... and this dish would have looked better if I took the pic after the cheese melted, but whateva. Anyway, here's what you do:
Makes 1 large pot
Mostly peeled 6 nice size potatoes
1.5lbs of ground beef
1 bag of frozen mixed veggies
half a block of cheese
few cups of milk
sour cream
Boil potatoes until soft and mash. Add milk (leftover gravy from another meal also works) and stir until your ideal consistency is met (I like mine slightly chunky), brown the ground beef and spice with black pepper and paprika, then add veggies to meat and cook until veggies are soft. layer meat/veggies on top of potatoes, then cheese on top. burners off, cover pot, and sit until cheese melts. Spoon to plate with and add a few dollops of sour cream on top.
Enjoy! It's a simple, hearty meal. I love it.

You know that technically and traditionally, if its not made with lamb its not a Shepherd's Pie, but called a Cottage Pie.
I learned that yesterday when I funny enough, made one last night for dinner, and while trying to find lamb at the the stores around here that sometimes have it and neither did yesterday, I bumped into a really good local Chef who told me beef is ok to use, but its a Cottage Pie instead.
Nummy regardless.
