340 grams of spaghetti pasta
1 cup Parmesan cheese (freshly grated)
3 large eggs
8 slices of bacon
2 cloves garlic (minced)
salt and pepper to taste
freshly chopped parsley (for garnish)
1. In salted water, cook spaghetti pasta until al dente. Once cooked, reserve one cup of the water and get rid of the rest
2. Combine eggs and Parmesan cheese in a bowl
3. Cook bacon until crispy in a skillet. Line a plate with a paper towel and put the cooked bacon on it
4. Using the same skillet, cook garlic for about a minute. Add the cooked pasta and make sure that every piece gets evenly coated with the bacon fat
5. Add the egg and cheese mixture. Stir well until creamy, but be sure not to scramble the eggs
6. Season with salt and pepper
7. Stir in cooked bacon
7. Garnish with freshly chopped parsley
NOTE: After pouring the eggs and cheese mixture, you can add a little bit of the reserved pasta water to loosen the sauce if necessary. You can also garnish the carbonara with flaky sea salt, olive oil, and more Parmesan cheese and bacon

Hey, something that might help is to prep the egg mix prior (not cook just prep) and then you wanna time the pasta so it just finishes cooking right at the moment the bacon fat has just stopped bubbling. You can probably add the garlic in about here too
Then toss the pasta in the pan with the bacon, toss, then add the egg mix. Toss it constantly, and if done right the residual heat from the pasta and bacon grease will cook it at the right rate to prevent egg scrambling.

I blended the egg and cheese mixture well while the pasta was cooking, then fried the bacon and garlic. I mixed the pasta and bacon grease on a low flame, then added the cheese and pasta water, stirring well. The pasta was well coated and succulent ^^ Your method would work well too, thanks for sharing =3
