Allon's Megaplex Pancakes!
Prep Time: 15 minutes
Cook Time: 3 – 4 Minutes per batch of pancakes.
Dry Ingredients:
2 Cups flour,
4 tsp Baking Powder
1 tsp Baking Soda
1 tsp Salt
3 Tbsp Brown Sugar
Wet Ingredients:
1 ¼ cups whole milk
2 Tbsp fresh squeezed lemon juice
1 egg
4 Tbsp melted butter.
Directions:
So these are the pancakes I made for Megaplex 2020 Online convention! I will probably be bringing these back to the actual Super Sponsor suite next year for 2021 as well as they turned out as some of my favorite pancakes I've made to date. For the convention I was doing a nice M on the pancakes in honor of Megaplex but drawing out the pancakes is not a requirement. These pancakes work perfectly fine just dropped onto a hot buttered griddle as well, and dare I say it would be even easier.
First step is to combine the milk with the lemon juice. This will create something akin to buttermilk, which you could use as well. Just use equal parts buttermilk to the amount of liquid used here.
Next combine all the dry ingredients in one bowl and mix well. Then make a well in the center of the dry mix and add all the wet ingredients together into the middle. Combine together all the ingredients until well mixed.
Preheat a griddle pan on medium heat for about three minutes. Cook for about two to three minutes or until the edges of the pancake start to brown and bubbles are appearing in the pancake. Flip and cook for another couple of minutes.
Serve with warm pure maple syrup or your favorite sauce. I like a mixture of melted butter and maple syrup myself. Enjoy some pancakes and have fun with your food!
Squeeze Bottle Pancake:
If you are going to make squeeze bottle pancakes you can art with you will want to make sure you SIFT YOUR FLOUR. This is critical as I learned in my first test batch I had a few to many clumps. You may also want to add another quarter cup of milk if you find the batter is just to think. Make sure the hole in your squeeze bottle is just very big to allow for the batter as it is a bit on the thick side. The more you thin it and the finer the texture the easier it will be to make art with, but the consistency might not be as tasty too. I like a thicker pancake batter so I keep my designs on the easy side of things.
When you are using the squeeze bottle method pipe the lines of your design into a preheated medium hot pan first. Then let cook a moment and then fill in the holes of the design. That way the lines will show up darker.
You can dye the batter if you want as well for colorful designs.

YUM! Looks really tasty!
Wuff REALLY "cheated" with those "silver dollar" pancakes wuffy had on his BYOB plate at your panel - - they came straight out of a box, mixed with a bit of water and some butter. *grins* But they still tasted okay. Probably not nearly as good as this one though!
The hash and the eggs, on the other paw, were more "hands-on". And wuff was quite satisfied with them. (Going to have to post those recipes up for furs here on FA to enjoy and create)
