..This was something that I made as a quick appetizer for my sisters birthday party which we had to day at home, and its very simple to make:
~ 1 log pre-sliced mozzerrella
~ 3 fresh medium tomatoes, sliced
~ A good handful of fresh basil (About 15 leaves, washed)
~ Prosciutto (if you dont have, rosemary ham works just as well)
~ A whoooooooooooooooooooooooooole lot of toothpicks
~ pitted Kalamata olives (optional)
~ thinly sliced cucumbers (optional)
You can layer them how you want, but I find its helpful to wrap them right in the prosciutto, then put a toothpick right through, and serve!
You -could- also drizzle on some extra virgin olive oil and balsamic on top of this to make this shmancy...and what's more, you could also put this on some lightly oiled ciabatta, broil it for 2 - 2 1/2 minutes and you have a caprese pizza / or with a George Forman type grill (or even on a stovetop pan, just press down the sandwich with another pan), a pressed panini!
