The Final course was a combination that so many people (Including myself and my mother) love... Peanut Butter and chocolate! Just something about the combination is simply wonderful to behold and enjoy!
This particular pie doesn't involve any baking (But you will need to melt some chocolate for it.) though the pie crust was baked ahead of time and cooled, the pie made a day ahead so it could properly setup for dinner. The topping there is Peanut Butter Cups.
The Pie itself is rich, creamy, and fairly dense. I thought I had made a copy of the recipe before but, sadly, I did not so the recipe below is going off of memory and how I've made pies like this since (I actually do somewhat regularly as they are easy and from the base you can add whatever ingredients you want to make it nearly any kind of pie.)
Anyway, onto the recipe!

No baking Peanut Butter and Chocolate Cream Pie
1 Already Baked pie crust (IN the picture I baked one up.)
-- Filling --
16 oz Cream Cheese, softened
3/4 cup Whipping Cream
1/4 cup sugar
1 cup Peanut Butter
12 oz chocolate chips
Combine in Mixer Sugar and Cream Cheese, cream together till combined, then add Whipping Cream and combine together until smooth. Whip on medium high in mixer until the mixture lightens and grows a little fluffy.
Melt in double boiler Peanut Butter and Chocolate Chips. Pour melted mixture into cream cheese mixture above and combine on low, then whip for a minute on medium high, scraping the bowl once to ensure everything is combine.
Scrap and pour mixture into pie shell, smooth out pie then garnish with peanut butter cups (Or, pour some melted chocolate over top.) And refrigerate for at least six hours, though over night would be good, while covered.
This particular one was served with a slice of ice cream.
It kind of ate a bit like a cheesecake pie.
Now I have a hankering to make one of these... Mmmmm.
