So, as I haven't told the lot of you.. I started working at a café not too long ago and I have been experimenting a tad. Here is a jam I made today, flavoured with pineapple, grapefruit and vanilla and a teeny tiny bit of lime.
Ingredients
1 large pineapple
2 grapefruits
2 limes
1 teaspoon honey
3 vanilla beans
700 grams sugar
200 ml cider vinegar
How to:
1. Cut the pineapple into pieces and use a food processor so that it's turned into teeny tiny bits and so that there's juice, put it in a bowl.
2. Then, remove the peel from the grapefruits and lime, and put them in the food processor, along with the honey and obliterate the citrusfruits together with the honey so that they're turned into pulp.
2. Put a strainer on the bowl you have the pineapple in and pour the contents of the food processor into the strainer. Use a spoon or fork to press against the pulp, squeezing more juice out, into the bowl.
3. Slice the vanilla beans in half and scrape the seeds out of there and add to the bowl with the citrus and pineapple mix. Use a spoon or some such to mix it all nicely together.
4. Set your stove to low heat and add the sugar and cider vinegar. Stir it constantly until the sugar has dissolved. (It should look like it's boiling.)
5. Add the fruit-vanilla mix into it and stir it in nicely. Let it simmer until the liquid has dissolved and it's nice and thick.
6. Pour it into sterilized jars and refrigerate.
