So, I make my own sofrito (as anyone who cooks and is worth a lick of salt with ties to countries that have this base should do) and my mom taught me, her mom taught her and so on. This is the base of most of my dishes that have a sauce of some type (braised meats, beans, stews and heavy sauces, yellow rice, etc.). Sofrito is a general term, so France, Italy, Spain and many other countries have their versions of it with different ingredients.
For me, I use the following: cilantro, garlic, green pepper, sweet peppers, red pepper (not pictured) and a yellow or sweet onion (but you can use red onion for a more mild flavor, or shallots if you really love the onion taste to come out on top). I'm a pepper guy, so I use far more peppers in mine. These are coarsely chopped to fit into a processor and then processed to the consistency of your choice. I prefer it slightly chunky, but many others prefer a smooth puree.
