A call for comfort food rings out and what better than the cheesy, easy and tasty humble grilled sandwich from the kitchens of ainoko

Been in the mood for grilled cheese sammiches as of late and caved tonight. I fixed four-cheese grilled cheese sammiches. And grilled cheese is one of the most tasty, decadent, artery-clogging comfort foods around today.
Ingredients:
Potato Bread (4-6 slices)
Colby-Jack
Monterrey-Jack
Pepper-Jack
Mozzarella
Pepper
Garlic
Parsley
Butter
2 Russet Baking potatoes (peeled and sliced)
Butter bread and place half of the slices on griddle. Layer your cheese to desired amount. Place remaining bread slices on top and season to taste with Garlic and Pepper. Cook on medium heat to desires doness of until cheese is melted and dripping off the sides.
While the sammiches are cooking place sliced potatoes in 400 degree oil and cook until golden brown or until desired doness.
Once everything is done, plate and serve.

From Chris: I will note here that
did not cook his fries 'all the way'. That said, the best way is to fry them once, let them rest for a minute or two - and then refry until golden brown. I would also recommend coating the fries, well before frying, either in Wondra flour or potato starch flour to get a crunchier texture.
