...About a few days ago, me and my stepmother went to this "CFA" and bought not only a whole bunch of scallops, but quite a few pounds of fresh haddock!
Ingredients:
3 haddock filets, cleaned
2 sleeves of Ritz Crackers crushed (2 cups of crumbs)
1 stick butter (1/2 cup) divided
1 teaspoon garlic powder
1 teaspoon dried parsley
1 teaspoon sweet paprika
salt and pepper
1 tsp lemon juice
1 - 2 tsp chives (used dried, but use fresh if available)
1 - 2 cups whole crab meat (not cheap, but worth it!)
2 fairly long sheets aluminum foil
To make:
Get the first sheet of aluminum foil, and coat with butter.
Layer with the crab meat
Then put the haddock filet on top of the crab...
Melt the other half of the butter with the crushed crackers, and coat on the top of the fish
Season the crumbs with the garlic, chives, parsley, touch of salt and pepper and then spread the paprika over the haddock...
Then cover with the other sheet of foil, and fold the edges together like an envelope...
Get your grill (or oven - it was honestly too hot to cook inside) to 400 degrees F and let cook for 15 minutes or until fish is firm, white and flaky. (Make sure you have a good pair of pot holders or oven gloves to handle the "unwrapping" of the foil)
Squeeze or spoon on the lemon and serve!
