A great gem from the meat maestro

It's the weekend and I'm cheating (the bread...mind you)
If it's one thing that I try and avoid are "Meals in cans" (and those greymuzzles out there that know what C-rations are; you know what I mean!). Sloppy joes are so easy to fix, and you don't need much to make it tasty.
You'll need:
1 to 1-1/2 Pounds ground beef (80/20 or leaner)
1 Can Rotel Tomatoes and Chiles (Be careful as the cans are labeled as to the heat!), drained
1 Small can mushrooms
1 Tbsp Yellow Mustard
1 Small Vidalia onion, diced
1 Red Bell Pepper, diced
2 Cloves garlic, minced
1/2 Cup of your favorite Salsa
1/2 - 3/4 Cup of your favorite BBQ sauce.
1 Cup freshly shredded pepper jack cheese.
1/4 Cup Brown Sugar
Salt and Pepper
Start off by seasoning the meat with salt and pepper and browning in a large, deep skillet. When the meat is nicely done, pull the pan off the stove and dump the meat into a strainer to get the excess grease and water from the meat.
Using the same pan, put it back on the stove and saute` the bell pepper, onion, garlic, and mushrooms for about 15 minutes to get the flavors nicely mixed.
Toss the meat back into the pan, then add the rest of the ingredients (including the cheese). Bring everything up to temperature, stirring regularly, then reduce to a simmer for about 15 minutes.
Now for the disclaimer; that's the "basic" way. The good thing is that you can adjust everything in this for your taste. To wit I added the following:
2 diced Jalapenos
Rotel tomatoes (Hot)
1 Tsp Prepared Horseradish
1 Tbsp "Kitchen Pepper" (Mix of Chipotle powder, smoked paprika, cayenne pepper, and coarse ground black pepper)
The interesting mix in the green ramekin is Lexington style BBQ slaw.
