I used a stuffing of Saute'd diced apples, goat cheese, cornbread croutons, and an egg to hold it all together.
Carefully butterfly the tenderloin, leave about a half inch on either end. Insert stuffing.
Tie with butchers twine and pan sear on medium/high heat for a to slightly crisp skin.
Rub with butter, pinch of salt, and diced Marjoram.
Cook at 350 for 35 minutes, or until meat is 155 degrees.
Let stand for a few minutes, giving the residual heat enough time to get meat to the desired 160 degrees.
Remove Twine, cut into slices and enjoy.
