Broccoli and Pesto Tagliatelle (With Garlic Bread)
Did I mention before that I love cooked broccoli? And basil? Well this is a combo of both, with a nice heaping of Parmesan cheese, and of course... It's PASTA! My mom made some garlic bread to compliment the meal, it wasn't made from scratch though so no garlic bready recipes for you, sowwy. But I do have the Broccoli and Pesto Tagliatelle recipe for you!

Broccoli and Pesto Tagliatelle
- serves 4 to 6 -
Adapted from Jamie's Food Revolution by Jamie Oliver.
Ingredients
1 medium potato
1 head broccoli
A large bunch of fresh basil
Sea salt
1 pound dried tagliatelle
1/4 cup green pesto
3 ounces Parmesan cheese
Procedure
1. To prepare your pasta: Wash and peel the potato and cut it into very thin shavings using a speed peeler. Cut little broccoli florets off the head and put them to one side. Halve the thin stalk lengthwise, then slice thinly. Pick the basil leaves and discard the stalks.
2. To cook your pasta: Bring a large pan of salted water to a boil. Add the tagliatelle and broccoli stalks and cook according to the tagliatelle package instructions. Two minutes before the the tagliatelle is cooked, add the broccoli and potato slices. Drain everything in a colander over a large bowl, reserving some of the cooking water, and return to the pan. Roughly chop half of your basil leaves and add to the pan with the pesto and half of the Parmesan. Give it all a good stir and if the sauce is too thick for you, add a splash of the cooking water to thin it out a bit.
3. To serve your pasta: Divide the pasta between your serving bowls. Sprinkle over the rest of the Parmesan and the remaining basil leaves. Serve it a lovely big bowl of salad.

My first time making this, this is going on my 'will make again' list of recipes. It's easy to make and the ingredients are simple, and it's not as time consuming as some of the other recipes I have. This is really a great food combination, and if you want you can add shrimp or chicken to it, or have it plain, it'll taste good either way. ^ w^
