A great new recipe from

(Quick and Dirty) California Sweet Chili
(No patience to soak beans here, but you may do so if you want.
Feel free to omit anything you don't like, or add more of to taste).
5 beans - 1 lg can (40oz) lt red kidney beans, drained,
1 lg can " dk red kidney beans, 90% drained,
1 or 2 sm cans (12-16oz) navy beans,
2 sm cans (16oz) of black beans, drained,
1 can (12-16oz) cannellini (or any white bean will work) beans, mostly drained
2, 12oz can whole kernel corn, drained
8oz carrots, sliced
1/2 sm pkg of celery, cleaned and sliced
1 lg Vidalia or white onion, chopped
12oz mushroom, canned, or more if fresh sliced
spices
1oz ground cumin
1 tb Basil
1.5 tsp Cilantro
1 tsp Oregano
1 tsp Himalayan salt (Do not overdo salt)
1 tsp fresh coarse cracked pepper
1 or 2 chopped deseeded dried chili pods & 1.5oz chili powder
2 (or more, depending on heat, size) chopped garlic cloves
1/2 c brown sugar
3 - 4oz blackstrap molasses
2 tbl coarse ground spicy brown mustard
(yes you may add more heat. But be kind,
and think of who's eating it before making it unpleasantly hot.
I like the original brand of Rooster "Tuong Ot Sriracha" for this,
Not the fake knockoffs. Dried chili pods are best however.)
(Spice amounts are rough estimates, this is a guide, let your taste be the final word).
(meat if desired. any kind, but not necessary).
And the secret ingredient (4 - 6oz of raisins. Not grape jelly,
as mistakenly believed and repeated by others over the past 20+ years. Ugh).
Slow cook all day (carrots must be soft, 3 - 4 hrs), Stir from bottom frequently,
do not burn. Refrigerate overnight (A must to help spices work).
May have too much fluid, you can skim some off, but save it just in case.
Re-add after refrigeration, if you want chili to be less thick.
Better to wait till the next day to do this, after a good stir.
Reheat & serve.
Serving suggestions - Sour cream and or melted cheddar cheese on top, with chopped chives, or preferably fresh green onions, served in a (lightly toasted on both sides) tortilla shell bowl.

*** From Chris: If skipping on the draining, ONLY ADD SALT TO TASTE! Undrained, those bean cans will have enough sodium to overfill an entire can of Morton's XD
