Rub
1t chopped ginger
1t crushed red pepper flakes
1t garlic
2T course ground salt
Glaze
1c orange pineapple juice
1T honey
1t crushed red pepper
1t paprika
1t ginger
Apply rub to rack of ribs and let sit overnight
Cook ribs low 250 apply glaze repeatedly. I did every 15 min
From Chris: If cooking at that low of a temperature, you will need to have the time to cook this!
I would have to say at least 8 - 10 hours, depending on the thickness of the ribs.
Further, for the glaze, you could boil it down with just 1/2 teaspoon of corn starch mixed in, should take about at least 20 minutes. You can certaily glaze it every 15 minutes or so, but really would want to give the ribs a chance to cook. Instead, the glaze -could- go on dead last, unless you were to broil the ribs at the last 5 minutes with the glaze on to get a 'crust' instead.
The rice is a boxed mix, but according to
- "Veg is zucchini onions and bell peppers coated with a bit of oil thyme and s&p"
A decent saute' in a large saucepan is all you really need, with 1 to 1 1/2 tablespoons olive oil;
I would recommend salting the zucchini first to draw out the water, and go from there.
