Brightly coloured and fully flavoured dish is a cheerful addition to many meals (it also is great on the zucchini slice or biscuit) from the kitchens of yelleena

This is so easy to do and it creates its own dressing. I love this on a hot summers night with platter of mixed deli meats, cheeses and crackers. Also great on chicken or beef schnitzel
Ingredients
1/2 Bunch of Basil
2 Tomatoes
1 spring onion
2 Tbsp sugar
Pepper and salt to taste (I use about 2 tsp ground pepper & a pinch of sea salt)
Method
Finely cut the spring onion white and some of the green parts
roughly chop the tomatoes
rip up or shred clean basil leaves
Put into a container together and gently mix
Add sugar, salt and pepper
Mix gently once more
Cover and pop this into the fridge for at least 3 hours.
The result is a delicious topper for steak, schnitzel even put it on cheese on toast.
If you blend this later it also becomes a fresh salsa that can be used on just about any meat or as a dip but it won't keep more than two days.
