...Been a while, so why not :3
~ 4 eggs whisked
~ 1/2 cup chopped onions
~ 4 mushrooms, rinsed + chopped
~ small chunk of linguica (1/2 of a link I had leftover)
~ heaping handful of pre-shredded cheddar cheese
Turn large saute pan on to medium high
I sautéed the onions first, along with the mushrooms and linguica - just add a pinch of salt to draw out the extra water that the onions and shrooms have...
Then put those on a plate to rest...
Then pour in the eggs, and let them set in the pan (about 2 - 3 min)
Then add back in the onions, shrooms , linquica and top with cheese, and fold!
By then the cheese will have melted, and you will have a great fattening breakfast *burp*
Enjoy - and remember - an omelet in and of itself is a blank canvas - meaning, you can put almost anything into it that fits your taste!

Omelets are wonderful, and so easily created!
Wuff tried something new for breakfast this weekend. Made Vrghr's interpretation of "Joe's Special" from San Jose CA. What a breakfast feast! Only finished half, and had the second half for lunch on the next day.
This looks great, and the inclusion of Linguica is a great choice. That sausage has such a great flavor.
Wuff has used a slightly different technique for omelets as well, sauteing up the onion and mushroom and then pouring the eggs right over them, and adding the interior goodies after the eggs had set. Not quite the "traditional" version, but also makes pretty good eats!
