This goes out to all of my vegan brothers and sisters who miss, or have never had, the greatness that is spicy, buffalo chicken wings. This tastes pretty much similar and is a great treat once in a while! The best part is that it's so simple! It technically only needs four ingredients to work!
INGREDIENTS:
Block of Extra-Firm Tofu
Buffalo Hot Sauce [of your choice]
Gluten-Free Flour or Flour
Vegetable or Canola Oil
Smart Balance, Vegan Margarine, or Butter [Optional, but recommended]
Italian Seasoning [Optional]
Garlic Powder [Optional]
Black Pepper [Optional]
Salt [Optional]
Lemon Juice [Optional]
MATERIALS:
Non-Serrated Chef's Knife
Saucepan or Deep-Fryer
Spatula or Metal Spoon
Glass or Ceramic Plates
Skillet or Saucepan
Bowl
Paper Towels
COOKING:
1: Pour vegetable or canola oil into a saucepan and heat on high heat. The amount of oil you need depends on the size of the pan and the size of the tofu. The oil should be able to completely covered the tofu pieces. If using a deep-fryer, heat-up the oil in the deep-fryer.
2: Carefully squeeze out the majority of the water out of the extra-firm tofu. Squeezing too hard will make the tofu crumble, so be very careful! You can do this by putting two papertowels on a plate, putting the tofu on the papertowels, and put two more papertowels on top of the tofu. It'll look like a tofu sandwich, with the papertowels acting as bread. Then, gently press on the papertowels covering the tofu to squeeze the water out. You should see the water being absorbed by the papertowels. There's no real way to tell if all of the water is gone, so do this for only about a minute.
3: Using your non-serrated chef's knife, divide the tofu into desirable pieces. I cut mine into bite-sized cubes.
4: Pour some gluten-free flour into a bowl. Then coat the tofu in the gluten-free flour, making sure to get all of the side of the tofu covered in the flour. [Optional] Sprinkle a little bit of garlic powder on all of the tofu. It doesn't have to be on all sides.
5: Turn the heat on the oil down to medium.
6: Very carefully, preferably with a long-handled metal spoon or spatula, slip the tofu into the hot oil. Since factors differ, including preference on texture of the tofu, it's best if you do one tofu piece at a time. Fry until brown, then remove and put on a plate of papertowels.
7: In a small skillet or saucepan, heat about 180mg of Buffalo Hot Sauce (about the size of a small bottle) at low heat until bubbling. Stir frequently. It doesn't have to be perfectly 180mg. If you have extra sauce on the tofu, it's alright. It doesn't stick.
8: [Optional] Stir-in spices, such as Italian seasoning, black pepper, salt, and/or lemon juice, to taste into the bubbling buffalo sauce. Melt vegan margarine or Smart Balance into the sauce completely. Turn off heat.
9: Cover the fried tofu in the buffalo sauce. Garnish with Italian seasoning. Enjoy!

SPECIAL DIETS - This dish is vegetarian because it contains no meat, fish, or poultry. This dish is vegan because it contains no dairy, eggs, or honey. This dish is gluten-free only if you choose to use a gluten-free flour, such as rice flour.

COOKING SAFETY - Be careful around hot oil. Hot oil can pop at any time, so never put your face directly over the pot of hot oil. Sometimes when the corndogs go into the oil, the oil pops up. Do not leave cooking equipment, such as spoons, in the hot oil. Once you are done using the hot oil, leave on a cool burner overnight. Do not dispose of hot oil immediately after use. (**From Chris: If the oil was only used once to fry, it can be reused. If not, I would recommend composting it.)
