Being a droid isn't that easy. Droids didn't have that many rights as sentient beings did. Plus, droids were at risk of having all their memories wiped to remove any "personality quirks", independent notions, or ideas to form. By a stroke of good luck or the force, Bex and Bez never had a memory wipe since they were rebuilt. Playing dumb and docile to their new owners while ideas of being free and flying their own ship danced around in their circuitry.
