I love how there are so many factors you can play with to alter the outcome when it comes to old school photography - just like I love the same when it comes to old school oil paints. For example I'm really fascinated by how Rembrandt experimented and created his own unique paint by adding sand and other materials to make the paint chunkier and "grungier" to get those really beautiful textured brushstrokes unique to his later art.
Sure, you can do anything in digital, but these old school techniques of various fields have some romantic beauty to them. Like making your own paint by grinding pigments with medium with a stone pestle instead of just buying it ready in a tube.
