A Caprese salad is, I've been told, a cold appetizer involving sliced tomatoes, sliced mozzarella, basil, and a drizzle of balsamic vinegar. Several years ago I decided to use that as a topping for tilapia fillets, and it's delicious.
Tilapia Caprese
3-4 tilapia fillets
1 14.5 oz. can diced tomatoes w/ basil, oregano and garlic (I used Del Monte brand)
1 tsp. dried basil
2 tbsp. balsamic vinegar
Shredded mozzarella cheese
Kosher salt
Black pepper
1. Open and drain the can of diced tomatoes; after it’s drained, pour the tomatoes into a glass or non-reactive bowl. Stir in the dried basil and balsamic vinegar.
2. Preheat oven to 350F.
3. Arrange tilapia fillets on a baking sheet or in a baking pan that’s been sprayed with cooking spray.
4. Sprinkle the fillets with salt and pepper, then spoon the tomato mixture on the fillets. Top with the shredded mozzarella.
5. Bake at 350F for 30-35 minutes, or until done.
