I post this in dedication to my Grandfather (may he rest in peace). This was the ONLY fancy thing I ever remember that man cooking but SHAZAM did he sure know what he was doing!
Recipe: (makes 2)
Filling:
3-8oz Cream Cheese Packs
3/4 Cup Sugar
1 Egg
4 Tsp Bakers Cocoa
2 Tsp Vanilla
Topping:
1 Cup White Corn Syrup
1 Cup Sugar
1 Egg
2 Tsp Vanilla
2 Tbsp Butter
PECANS!!!
Mix the filling up with a blender and spread across both pie crusts. Add enough pecan halves to cover the mousse filling. Heat all the topping ingredients up to a boil and pour evenly across the top while still HOT. Bake the whole mess at 350 for 40 min!
Note: This recipe calls for either a blind baked pastry base or a frozen one.
