Samosas are fried or baked pastries with a savory filling, and hail from India.
Major Matt Mason told me that he'd made some ersatz samosas with mashed potatoes, peas, and biscuits (like the Pillsbury biscuits you can get from the refrigerated section of your market). I like samosas, so I decided to try my paw at it.But, I can't leave well enough alone, and my kitchen is a lab where the Mad Scientist in me likes to play. So, allons-y!
Loaded Ersatz Samosas
What you need:
1 24 oz. ready-to-cook garlic mashed potatoes
3 tsps. curry powder, or to taste
1 8.5 oz. can sweet peas, well-drained
1 7 oz. can corn, well-drained
1/3 cup sour cream
1 3 oz. pkg bacon bits (because BACON)
1 fat tbsp. dried snipped chives
Black pepper, to taste
1 pkg (8) Pillsbury Grands biscuits
What To Do With What You Need:
1. Flatten out the biscuits until they’re less than 1/8 inch thick.
2. Preheat oven according to the biscuit package directions.
3. Cook the potatoes according to package directions; place in a large bowl.
4. Stir in the curry powder by the teaspoon until it’s to taste.
5. Stir in the other ingredients.
6. Spoon the filling (about a fat tablespoonful or so) onto the biscuits; fold over and crimp the edges.
7. Place samosas on a parchment paper-lined baking sheet, brush with a little beaten egg (or egg substitute).
8. Bake according to biscuit package directions.
Verdict: I've tasted the filling, and Oh My. The curry powder is there, mellowed a bit by the potatoes and sour cream, but it politely tells you that it's there toward the back of your mouth. Very tasty. Thanks to the bacon, you don't need to add salt; the bacon and the chives, corn and peas ups the ante in terms of taste and texture.
The finished product is delicious.
Grade: A
UPDATE! Almost forgot - with only 8 biscuits in the package, you WILL have potatoes left over. You can either serve it as a side dish, freeze it for later - or buy another package of biscuits.
