Bolognese (Meat Sauce):
2 lbs Mirepoix (see: below)
--1 lb Onion, fine dice (~2 med. sized)
--8 oz Celery, fine dice (~4 ribs)
--8 oz Carrot, fine dice (~2 med. sized)
5 cloves Garlic, minced
1/4 cup Olive Oil
1/4 lb Bacon, fine diced
1 lbs Ground Veal*
1 lbs Ground Pork*
1, 6oz can Tomato Paste
1 cup Water
1 cup Dry White Wine
1 cup Heavy Cream
1 Tbsp Thyme, fresh
TT Salt and Pepper
*: I used 2 lbs ground beef.
1. In a 6-8 qt pan/pot/rondeau, med. high heat, add olive oil, and vegetables. Sweat ~ 5 mins until tender.
2. Add bacon and meat, stirring until all the pink is gone.
3. Add fresh thyme, and all liquid ingredients. Stir until thoroughly mixed. Bring to low heat, and simmer ~2 hours, until sauce is thick.
