Ingredients:
8c chicken broth
1 stalk lemongrass (finely chopped lower ends, just chuck the upper stalks in the broth)
1 pink shallot
green onion stalks (leftover from cutting up green onion slices)
4 tbsp powdered coriander
2 tbsp grated galangal
shiitake mushroom stalks (leftover from slicing shiitake mushrooms)
red onion root end (leftover from dicing red onions)
saffron threads (about 11-13 threads)
3 sticks saigon cinnamon
juice of 1 lemon
juice of 1 lime
3 tbsp soy sauce
Bring this mixture to a boil and let simmer for about an hour to bring out the flavours before fishing out the stock portions (stalks of onion/lemongrass, sticks of cinnamon, roots of onions, shiitake stalks).
