in a way that will not destroy the squash , I was thinking a Crib frame around the squash and a bracket the size of the face you're going to carve holding the pumpkin down...

The principal is sound. The execution needs a little development.
A combination lathe-mill would be more successful I feel. You could use the tail stock to keep the pumpkin captive against the head stock whilst the mill did its work. In addition, the lathe could be used to cut the 'lid' from the top of the pumpkin.
I'm struggling to devise a means of automating the 'coring' of the pumpkin. Post carving and 'lidding', perhaps a carefully calibrated plasma cutter........
