Something I through together this morning for my mate! It tastes pretty good, I'm proud :3
I don't really have a specific recipe, but the ingredients are all to taste
Leak, chopped to taste
1 clove of garlic, minced
2 cups of fried rice (already cooked)
coconut extract to taste
soy sauce to taste
pepper and salt to taste
and while cooking, olive oil
There was leftover rice from last night's dinner, and a few other nice things to use.
First, put the chopped leak and garlic in a frying pan, add some olive oil and toss for a bit on medium heat, add a couple dashes of soy sauce. Cook until leak browns on the sides just slightly. Add rice, coconut extract, salt, soy sauce, and pepper to however much you want and toss for about 3 minutes to even it all out.

This was just one of my random throw it together things, but it came out pretty nice. I was skeptical at first about the coconut, but it turned out to add a nice flavor to the food. There is a little bit of something missing to REALLY put it all together, maybe a little chicken or shrimp, but for now I'm pretty satisfied with it.
