My Grandpa is a spoiled, spoiled man. His wife used to bake him cookies Every Week so he could have one with his coffee in the morning. When she passed I took up this responsibility- dedicating an hour or so each week to spoiling him.
These are his FAVORITE cookies, which is lucky for me, because they're THE EASIEST cookies on earth to make. EVERYONE who's tried them LOVES them. The recipe was my Grammies, and I have no idea where she got it from.
Ingredients:
1 c. peanut butter
1 c. sugar
1 tsp baking soda
1 egg
Procedure:
1. preheat oven to 350
2.Warm peanut butter in the microwave for about 15 seconds to make it easy to mix.
3. Whisk together the egg, sugar and baking soda until smooth and well blended.
4. Add peanut butter 1/3 at a time, mixing until smooth after each addition.
5. drop cookies by tsb full, and bake for 5-7 minutes
**Notes**
Let cool for only a minute on cookie sheet, and then transfer to paper towel on counter to cool completely. If you leave them on the sheet too long they WILL stick.

You could so parchment paper, personally I hate using it because the scent of it bothers me. They don't stick to the paper towel, because the peanut butter has enough natural oil in it to keep that from happening anndd they're cooked all the way thru.
However *every time* I've let them sit on the pan for more than a minute they've stuck. I don't know why, but they do.
