I hear it all the time, "That doesn't look like the guacamole I'm used to."
Well, because it's not. This is a special white girl version all my own. It's a little lighter than normal, and is a bit creamer than the usual. Though many have said it doesn't LOOK like what they're used to, I've never ever had anyone say it wasn't any good- and I usually don't have any left overs, either.
You'll need:
2 large avocados, pitted, peeled and mashed up nicely.
1 8 oz container of Philadelphia whipped cream cheese
2 tsp garlic
1 tsp black pepper (coarse ground)
dash of salt
2 tsp lemon juice
EITHER: 1/2 can rotel tomatoes (I use lime and cilandro) OR about 4 tbs salsa of your choice
Mix your cream cheese and avocado until nicely blended, and then slowly mix in the spices. Make sure you get them nicely blended, or you'll have half a bowl of guacamole tasting different from the other. Add the lemon juice and salsa last, mix well and enjoy.
