Black Beans & Rice with Kielbasa (Rice Cooker version)
Yet another of the weekend's recipes for a friend.
This is another of wuff's adaptations of an old "bachelor cooking" staple. Vrghr used to create this with instant rice, chicken stock, black beans, and the kielbasa sausage. It was a very fast, very cheap, and filling dish for a wuff cub without a lot of kitchen skills nor cash.
This version uses wuff's rice cooker for "set and forget" cooking. But it could just as easily be created on stove top, or in an Instant Pot/Multi-Cooker. And because it uses cheaper "real" rice instead of the instant boxed sort, it is even more economical.
It also makes a great base for you to experiment with your own combination of sausages, spices, and herbs! Just remember, you'll have to cook any uncooked version sausages first, as they might not finish in the time it takes to cook the rice. Smoked sausage such as Kielbasa, beef, turkey, etc., will work just fine without any other alterations.
INGREDIENTS:
2 Cups long grain Rice (Not Instant), such as Basmati, Jasmine, etc.
1 Can Black Beans (Not drained!)
1 Can Stems and Pieces Mushrooms (Not drained)
2 TBS Salted Butter
1 TBS Minced Garlic
1 ring Kielbasa or similar smoked sausage, cut into 1 inch segments
1 tsp Italian Seasoning
1/2 tsp Black Pepper
2 tsp Better Than Bullion Chicken Stock base (or equivalent)
Chicken Stock to make up fluid level in your rice cooker (or approx 1 3/4C liquid to 1C rice, so 3.5 C if making stovetop)
Rice Cooker
DIRECTIONS:
Drain the liquid from the beans and mushrooms into a measuring up. Make up the difference needed with chicken stock. Mix in 2 extra teaspoons of the chicken stock base concentrate to make the stock even stronger
OPTIONAL: Rinse the rice in a sieve until the water runs clear
Add all the ingredients to the rice cooker. Stir briefly, then set the cooker to cook normal white rice
When the cooker completes its cycle, allow it to rest about 10 minutes for the rice to continue to steam. It will be fluffier
Open the cooker and fluff the rice with a fork
Spoon into bowls. Optional, garnish with some sliced chives or parsley

With the right spices, you could create a somewhat similar taste. But looks can be deceiving. Wuffy would get run out of New Orleans on a rail if he claimed it was anything close to a real Jambalaya. No roux, for one thing. *grin*

Make sure to adjust the liquid levels for a pressure cooker. Unlike stove top or rice cooker, almost all pressure cookers want a 1 to 1 ratio for liquid to rice for long grain white rice. And wuff has heard the best way is to just cook at high pressure for ~6 minutes for long-grain white rice (brown and "wild" rice takes longer, and may need a little more liquid), ignoring that "rice" button on the front (if you have one).
Also, make sure to let the rice rest for at least 10 minutes when the cook cycle is done, and then do a "quick release" (vent). This lets the rice steam and absorb more of the liquid for fluffier texture.

*nodnods* Though this definitely makes a great "bachelor dish" for folks on a budget, with not a whole lot of time or kitchen skills, but want something fairly nutritious, filling, and tasty. And with successful creation comes more confidence for our "bachelor" to try something more challenging in the future! *GRIN*
