1 tablespoon olive oil (or enough to lightly cover the bottom of the pot)
3 garlic cloves, minced
1 large onion, chopped
1 orange bell pepper, chopped
1 16 oz can black beans
1 16 oz can kidney beans
1 16 oz can dark red kidney beans
1 16 oz can chickpeas (garbanzo beans)
1 16 oz can cannellini beans
1 6-8 oz can tomato paste
1 16 oz can stewed tomatoes
1 cup water
2 1/2 tablespoon chili powder
1/2 tablespoon cinnamon powder
1/2 teaspoon cumin powder
dash of salt
dash of white pepper
cayenne pepper to taste
In a large-ish pot add the olive oil and set to medium heat on the stove. Add your garlic, onion, and pepper and let it cook for about 3 minutes. Stir occasionally with the all important wooden spoon.
While your wait, combine your beans in a colander and rinse them. Afterwards add them to the pot along with the stewed tomatoes. In a small bowl (or your liquid measure) mix together the water and the tomato paste and add it into the pot. Allow chili to simmer -- about 15-20 minutes, or until it thickens. Then add your spices and simmer another 5 minutes.
Just so you know, the pepper is optional. I added it because I like orange bell peppers and I wanted something to play filler. Also, the cinnamon is nice but not needed. It give it a sweet taste at first, then you feel the burn from the chili. :) That was a happy accident I had the last time I made it. <.< Gotta love grabbing the wrong thing when half asleep and cooking...
