Well, having the day off today - and especially by myself, FOR myself, is a very rare treat.
So what better way to treat myself than by cooking up some more things?

Ingredients
1/2 cup granulated sugar
1/4 cup brown sugar, packed
2 teaspoons ground cinnamon
1/4 teaspoon salt
1/4 teaspoon pepper*
1/4 teaspoon cayenne pepper*
1 egg white
12 ounces pecan halves
Instructions
Preheat the oven to 300 degrees Fahrenheit. Line a baking sheet with parchment paper and lightly grease it with cooking spray. Set aside.
In a small bowl, mix the granulated sugar, brown sugar, ground cinnamon and salt. Set aside.
In a large bowl, whisk the egg whites with 1 tablespoon of water until lightly frothy.
Add the pecans into the bowl with the egg white mixture and mix well. Sprinkle the sugar mixture over the pecans. Mix until evenly coated.
Spread the pecans on the prepared baking sheet and bake for 40 minutes, stirring a couple of times during the baking process. Remove from the oven and allow the pecans to cool on the baking sheet before serving.
~ I agree with stirring it from time to time - but, not in the time that it needs to be cooked. Because at 40 minutes, there were more than a few pecans that were burnt.
That said, I would actually cook this for 30 minutes, no more.
~ Make sure you -also- use a good piece of tin foil when you cook these on your cookie sheet or baking pan, that will save you a lot of agony cleaning up!
These make great gifts, snacks, in salads or etc. !

There's a fellow with a pickup here that sets up on the side of the road, or at various farmers markets. Sells boiled peanuts, salted or spicy.
Vrghr had heard of those before (a common southern treat), but never tasted them.
Bought a bit Styrofoam cup of them one day: Oh dear! Now wuff is hooked! And you can't get them anywhere in town, except his truck!
Wuff now has a peanut "pusher" he has to track down to get his fix! *giggles*
