Fusions are entirely different people with different personalities and everything.
Steven is 16 Greg is 44 and Steg appears to be in his late 20's to early 30's. He is very clearly sexualized in the show itself by the show's own creators. As evidenced by the belly shirt, boob window, 6 pack, and hip thrusting when the character is revealed. Not to mention they try to show his adulthood with a plethora of body hair.
Stevonnie on the other hand is treated in a wholly different manner when introduced in the show they exclusively said they were ace and they never did anything overtly sexual nor is their clothing ripped or revealing.
