These are also something that I've been working on every once in awhile. For the website https://www.squiby.net.
This is my own species of adoptables, called Lalaas... Flying llamas, basically. Got the idea from an episode of Family Guy. :D
Anyway, these should be colored and put up on the website soon. :D

All you do is wait till you get to the end of a row, (and if you're doing stockinette stitch, it's the end of a RS row.) and then just use the diffrent color of yarn. You break off the other peice so that there's a tail you can weave in afterwards. If you're doing garter stitch, there'll be little tracks on one side, but if you switch colors on the same side of the peice every time you switch colors, it won't matter. Does that make any sense? I can try to make a video and put it on Youtube to show you.
