...Well, before the torrential rain hit, I was able to get in some grilling :B
Recipe is from:
https://www.myrecipes.com/recipe/co.....barbecue-sauce
Ingredients
1 cup cola soft drink
1 cup ketchup
1/2 cup brewed coffee
1/4 cup dark molasses
2 tablespoons sherry vinegar (used rice vinegar, but you could also use apple cider vinegar as well)
2 tablespoons Worcestershire sauce
1/2 teaspoon chili powder
1/2 teaspoon kosher salt
1/8 teaspoon garlic powder
1/8 teaspoon onion powder
1/8 teaspoon cayenne powder (just for a little "oomph")
1/8 teaspoon smoked paprika
How to Make It
Combine cola, ketchup, coffee, molasses, vinegar, Worcestershire, chili powder, salt, garlic powder, and onion powder in a medium saucepan over medium-low. Cook, stirring occasionally, until heated through and flavors meld, about 30 minutes. Remove from heat, and cool completely, about 30 minutes. Transfer to an airtight container, and store in the refrigerator up to 2 weeks.
I used this sauce as a marinade once it got cooked down (made a double batch) and then chopped up some zucchinis, some banana peppers, washed up some mushrooms…had the meat seasoned, then soaked in the marinade while I got things cooking...
And cooked on the grill at 350 F for about 10 - 12 minutes!
The best part is zucchini/squash taste good cold or hot once cooked (and you can always make a salad with them)
Enjoy!
