Well, today I got a chance to cook quite a few things...though you don't have to cook this dish at all :p
Ingredients:
3 fresh tomatoes
2 largeish "bocconcini" mozzarella balls, sliced (you can leave out if you want it vegan / lactose free)
1 ripe nectarine, sliced
full handful of fresh basil, chopped (at least 1/3 cup)
full handful of fresh mint (also 1/3 cup at least)
2 tablespoons extra virgin olive oil
2 tablespoons balsamic vinegar
chili-garlic salt (or just basic salt and pepper is fine)
Just slice the tomatoes...then the nectarine...and chop the herbs...then slice the mozz...
Layer them in your bowl, add in the oil and vinegar, season to taste, and toss !
Cover that large bowl with plastic wrap and let chill for a few hours in your refrigerator and then serve when ready!
