I still don't understand how she puts the rear greaves on, or why she doesn't bother armoring the rest of the leg.

If you knit a horse's leg in the likeness of a greaves, she feels tied up and refuses to walk until she is untied. In this concept, lady-centaur still uses the principle of protecting horses in order not to deprive it of mobility =)
