To cut down on my ever enlarging tummy, heres some very simple recipes:
What I mean by "Four" and "Four" is that each recipe has those amount of ingredients, respectively.
Baked Asparagus with Prosciutto and Cheese
Good bunch of asparagus, washed and cleaned
few strips of prosciutto / speck / pancetta / or BACON
olive oil to coat the asparagus (about 1/4 to 1/3 cup, no more)
shake of shredded parmesan cheese (about 1 - 1 1/2 tablespoons)
You only need a large baking pan, and coat some of it with 1 -2 tablespoons olive oil to keep the food from sticking...then put on the asparagus and layer it with the prosciutto and cheese...cover it with foil...and bake at 350 F for 30 - 45 minutes, until tender.
Then:
Chicken Tenders -
1 package boneless skinless chicken tenders
1/2 stick margarine
2 eggs
Italian panko crumbs
I would definitely would recommend flattening / tenderizing the tenders first, it will help them cook quicker and more evenly.
All you have to do is get a large saute pan / wok, get it to high and add in the 1/2 of that 1/2 of a stick, get a Ziploc bag to hold the crumbs, coat the chicken with the egg and then add the chicken to the crumbs, seal it up and give them a good shake.
Then fry - I did four tenders at a time, till the tenders got good and brown (about 5 -6 minutes) - when I was left with the rest of the tenders, I fried the rest with the other part of that margarine.
Put on a paper towel to drain, lightly season with salt and pepper - though it wont need all that much seasoning if the Panko is already seasoned :B
Its great with a squirt of lemon, and a very tasty meal!
