I hate the idea of immutable evil as more of the concept of cultural differences and xenophobia. The black-and-white morality of fantasy settings don't make much of a realistic sense to me in terms of intelligent races that would develop their own language, teachings, cultures, art, etc. A species could not survive collectively if it was constantly trying to backstab each other for personal gain. I think in some sense why stuff like D&D gnolls and warhammer Skaven are written as "divinely created and divinely obey" as otherwise they would not be so self destructive (particularly in picking fights with larger powers).
In short: They are not evil in setting, because evil is banal.

That's exactly, how I envision gnoll society to be like, too. Matriarchic, semi-nomadic, specialization in hunting game.
I imagine gnoll cuisine to be very spicy, because of fewer taste buds, and potentially deadly to non gnolls, because traditional recipies contain carrion. It's rude to leave left overs, especially tasty bones.
A fourth subspecies of gnolls is also striped, but smaller than the rest of them. They breed giant insects for food and transport. Yes, it's the aardwolf gnoll.
