I've been on a bit of a diet lately, and I was casting about for something that was nutritious as well as tasty, and someone mentioned this in passing. Because diet, I dialed back the brown sugar a bit, used skim milk, and used cooking spray instead of butter to grease the baking dish. I plan on cutting it into 18 pieces for breakfasts and snacks.
I'm sort of arbitrarily saying that each piece will be 100 calories.
So, here we go:
Oatmeal
1.25 cups rolled oats (not instant)
3 tbsp light brown sugar
1/8 tsp salt
1 2/3 cup milk
1 egg
1 tsp vanilla
1/4 tsp almond extract
Fruit
12 ounces of . . . well any fruit, really; I used blueberries
Topping
1/3 cup each rolled oats, sliced almonds, and light brown sugar
1 tbsp flour
1/8 tsp cinnamon
1/8 tsp salt
2 tbsp melted butter
1. Preheat oven to 350. Butter or use cooking spray on a 9x13 inch baking pan.
2. Combine oats, sugar and salt in one bowl; combine egg, milk, vanilla and almond extract in another bowl; combine the wet into the dry and whisk together. Let stand a few minutes for the oats to soak before putting it into the pan.
3. Stir together the topping ingredients (Oh, I used to DREAM of food what had ingredients in it!)
4. Pour the oatmeal into the dish, top with the fruit, top with the topping.
5. Bake at 350 for 50 minutes or until lightly browned and just set. Cool 10-15 minutes before serving.
6. Mangia!
