Ingredients
1 small lemon (didn't have, skipped)
1 cup whole-milk plain Greek yogurt*
¼ cup olive oil
1 ¼ tsp salt
2 cloves garlic, peeled (used 2 heaping teaspoons of chopped garlic in a jar)
2 tsp ground cumin
1 tsp ground coriander
1 1/2 tsps. curry powder
1 tsp fresh grated ginger (also from a jar)
¼ cup fresh cilantro, plus more for garnish (if allergic or if you don't like, swap this with mint)
1 ½ lbs lamb loin chops
Steps
Trim ends off the lemon and remove seeds. Cut up lemon and place in a blender, along with the yogurt, oil, salt, garlic, cumin, coriander, and cilantro. Purée until smooth and transfer to a resealable gallon-size bag. Add the lamb to the bag and seal, pushing out any excess air. Shake to distribute marinade and refrigerate 2–4 hours.
Arrange oven rack in top position. Heat broiler on high. Line a rimmed baking sheet with foil. Remove lamb from yogurt, wiping off excess, and arrange on lined pan. Broil 4–5 min. per side, until browned. Garnish with cilantro, if desired.
I agree with most of this recipe, except for the Greek yogurt, which was a bit thick (even with the olive oil added); that said, I would use regular plain yogurt or even low-fat milk yogurt.
As for the eggplant, those are Asian eggplants (which are available in a lot of supermarkets now, and if not, your Asian grocery store would have these real easy)...the ends cut off, sliced in half, basted with olive oil and lemon pepper seasoning right on them.
Grill those first to get those out of the way, only need about 15 - 20 minutes on the grill at 350F.
Those are lamb leg shanks, which only have two bones at most and a piece of gristle, but it still makes for a great piece of meat to grill for a reasonable price! And I grilled these for a bit longer, about 10 minutes each side at 400 F.

~ For a stronger Indian flavor, add 1 tsp of your favorite garam masala, which comes on a good bit stronger...jasmine rice goes well with this, along with your favorite naan, chapati, Indian pickle and mint chutney !
