I had a craving for Ziti today, so made some. Here's how it turned out.
What You'll Need
-1 box of penne pasta noodles
-1 24 ounce jar of pasta sauce (I used Prego 4 cheese)
-pesto
-Italian sausage
-chopped baby bella mushrooms
-ricotta cheese
-half an onion, chopped
-1 clove of garlic, chopped
-shredded mozzarella
-provolone slices
-butter
-spinach (optional)
Step 1:
Start by bringing your penne to a boil in a large pot. This should take about 10 minutes.
Step 2:
While the penne is boiling, add 1/4 cup water to a skillet, a pallet of butter, along with the onions and garlic. Cook at high heat for 2 minutes. Next add the Italian sausage, chopped. Continue to cook until the sausage has completely browned. Next, add the mushrooms (If you're making it with spinach, now is the time to add a handful of it, too). Continue to cook at Medium heat until the mushrooms have shrunk a bit. Keep warm on low heat while you wait for the penne to finish boiling.
Step 3:
When the penne is done, drain the water. Using the same boiling pot, add the pasta sauce, fill the jar half way full of water, swish it around, then pour the rest into the pot. Add 3 hefty tablespoons of pesto into the sauce. Stir and bring to a boil. Once boiling has just started, add the ricotta cheese. I didn't add a precise measurement because feel free to add as much as you'd like (at least 15 oz). Make sure to break up the cheese and mix it in well. This will thicken the sauce. Turn off heat.
Step 4:
Pour the drained penne into the pot along with the sausage and mushroom mixture. Mix well along with a handful of shredded mozzarella. Once mixed, pour entire mixture into 2, 8X12 glass pans, spread evenly. Top with more mozzarella cheese, as well as an entire covered layer of the provolone slices for both pans.
Step 5:
Bake at 400 degrees for 18 to 20 minutes. Remove from oven and let sit for a few minutes and enjoy.
