I probably spelled the name wrong, but it's meant to be a type of Japanese chef's blade with three purposes. I thought it would be a cool name for the guy, who by the way is Tempura's Sensei. To those wondering about his lack of ears, it's a pretty gruesome set of wounds he got contesting another master of 'the fatal arts'. His style(and Tempura's) is 'Ten needles', and his former opponent's style was 'Iron jaws'.
