It used to just be called Stat Exp in most places, since it acted as actual experience, unlike EVs (a term coined by a rather interesting person on the GameFAQs Ruby/Sapphire boards). You could max out all five stats just by battling, and boxing/unboxing the Pokemon to recalculate its stats on the fly.
And now I'm feeling too nostalgic for my own good.

I think Flareon looks the best visually and probably has the better attacks, Jolteon has that one Bug Type move, Pin Missile, to counter Psychic types, but my favorite would be Vaporeon! And with acid armor it's got great defense stats!

Part of me wonders how a Pokémon would actually "use" the stone to evolve. Just being in the presence of it doesn't make sense, then it should be reusable.
Do they eat the stone, causing them to absorb the stone's power, or do they simply crush the stone, breaking the seal, which then bathes the pokemon in the stone's power?
It's just a stupid question I have that never really got explained in the games.

The anime basically had the trainer tap it against the Pokémon that was going to evolve, and like a PokéBall it was a one use item. The internal glow of the stone was used up, indicating the power was gone. I've even seen some Pokémon wear the used evolution stone as jewelry.
There was one time a Thunder Stone was flying through the air and Ash/Satoshi warned Pikachu "you'll know what'll happen if you touch that!" Pikachu didn't quite get out of the way but Ash caught the stone before Pikachu could.

Bulbapedia doesn't explain anything further about the games' mechanic on how the stones work. Almost like it's a PP up or other one use item:
