Baked a loaf during my spare time for some reason and turn out really good! Note; Don't use too much flour for baking.
All you need are:
Equal parts Bread Flour
Equal parts Self-raising Flour
Yeast
Water
Salt
Directions:
1 Mix in all your dry ingredients into a bowl; flour, salt and yeast
2 Mix in water to the batch and stir to make thick, but not wet, batter and rest for 8 hours or overnight covering it with a damp cloth
3 Knead the dough on a floured surface and let it rest (proof) for at least 1 hour
4 Fold the batter again to introduce oxygen for 10 minutes or so and let rest for another 1 hour
5 Preheat the oven to 250°C and prepare a stainless steal pot with lid, or dutch oven pot for the bread
6 Floured the pot on the base and transfer the dough to the pot lightly covering it with flour and scoring the dough
7 Bake with the lid on for 1/2 hour before checking the dough and bake another 1/2 hour with lid ajar
8 Bake for fifteen minutes with lid off
9 Remove the pot from the oven and let it cool for an hour before serving it
10 Done!
